At this year’s SEED Food and Wine Festival, we had the pleasure of meeting Monica Heather Auslander. From chatting with Monica I know one thing for sure: Food is Monica’s Life. While working as an inpatient dietitian, she cared for pediatric and adult victims of trauma, cancer patients, recipients and donors of multivisceral organ transplants from the Miami Transplant Institute, patients with gastrointestinal disorders, diabetes, surgery patients, and rehabilitation patients suffering from traumatic brain injuries. Her dedication and passion for guiding others towards a healthy lifestyle and with her experience in knowing noone is the same in their body’s constitution, she is the driving force behind “Essence Nutrition”. Essence Nutrition just opened last week and we had to talk to Monica about the amazing work she is doing.
Monica is a Miami native who completed undergraduate coursework at the University of Florida. She completed her Master’s in Dietetics and Nutrition at Florida International University with published and presented research at the 2013 Academy of Nutrition and Dietetics Food and Nutrition Conference and Exposition. Monica has previously worked as a pediatric dietitian at Jackson Memorial Hospital in the pediatric intensive care unit. She is a committee chair within Junior League of Miami, serves on the executive board of the Jewish Community Services Young Alliance, and is a certified volunteer at the Greater Miami Humane Society, embodying the essence of the beauty of giving back.
mindfulCITY: Why the name Essence Nutrition?
We understand that people may feel overwhelmed and confused with so much food-related information. Sometimes it is quite difficult to know where to begin. My aim is to bring them back to the essence of nutrition by providing a customized state-of-the-art nutritional experience.

We know nutrition is not a one-size-fits-all approach. Whatever someone’s age or stage, we create an individual nutrition plan that suits their needs. We work with each person side by side so that they can successfully achieve their ideal nutrition and wellness goals. We use all forms of communication to support you; through email, Skype, FaceTime, telephone and in-office consultations. Health is a serious issue and feeling good is very important. Not only is it crucial to value your health, but also it is equally essential to find a Registered Dietitian that understands your needs and supports you.
